APPETIZERS

ZATZIKI   Most known and traditional blend of Yogurt,  cucumbers, garlic, and herbs, usually served as a dip, or as Gyro-dressing !
TARAMOSALATA   Red-Caviar Dip, ideal on bread, or Pita Bread, to enhance the taste of other foods, and serve as the ideal appetizer !
MELITZANOSALATA   Marinate and Roast some Eggplant, Add some garlic, Virgin Olive oil a few pinches of Greek Herbs, ... and Voila !  A perfect Dip,... a touch of bitter taste to be smoothed with a sip of ouzo, or Dry White Wine !
FETA  CHEESE   Well !!  Everybody knows Feta, ... Creamy, Smooth, absolutely and deliciously salted to perfection Cheese, Sprinkled with Olive Oil, and herbs !
ELIES  [KALAMATA]   Assortment of Giant black, purple, and green Kalamata Olives, Bathed in salted juices of Olive Oil, Vinegar, and Greek Herbs, ... and gently aged to perfection.
MEAT BALLS   An old fashioned Greek recipe mixing herbs, parsley, mint, oregano, chopped-onions, bread, sirloin, EVOO, ... rolling them in spiced bread crumbs !, and convection-oven-baking them to ....
DOLMADES   Grape leaves stuffed with rice and then rolled. Served, most often, cold as appetizers. Simple in appearance, this dish requires numerous cooking operations in order to achieve the hint of lemon flavor that tantalizes the taste and opens the appetite.
